225g (8oz) Self raising flour
100g (4oz) Caster sugar
100g (4oz) Margarine
Half lemon, grated rind and juice
1 medium egg, beaten
1. Heat oven to 180c, 350F, Gas mark 4. Grease some baking trays.
2. Mix flour and sugar, rub in the fat.
3. Add lemon rind, juice and add sufficient egg to make stiff dough.
4. Roll out thinly and cut out biscuit using your favourite cutter!!
5. Place on baking trays and bake for about 15 minutes.
6. Decorate however you like!!!
